UU (you-you) is the celebratory call in Morocco. We made one sauce — tomato, garlic, Aleppo pepper, vinegar and lemon essence — for every meal, small and large, alone or with friends and family.

In Morocco, the you-you rings out when something is worth celebrating. Our sauce is built the slow way: tomato and garlic simmered down, Aleppo pepper for a soft round heat, vinegar and lemon essence to keep it bright.

Ways to use it

Spoon over warm khobz or sourdough with olive oil and flaky salt.

Stir into shakshuka, or swirl through a soft scramble at the end.
